Ubuntu Server, OpenVPN/PPTP and interface forcebind?

Hi!
I have a few questions that the tutorial doesnt deal with.
1) Privacy. How to set up your PPTP or OpenVPN anonymising ervice under Ubuntu Server 12.04.
2) How to forcebind your VPN connection (ppp0) to your torrent client to effectively sever any network traffic when the OpenVPN/PPTP connection dropps to prevent your anonymity from getting compromized. The Vuze clinet has easy built-in options for this as seen in the screenshot below, but it is't by any stretch of the imagination an easy task to accomplish from the Ubuntu Server 12.04 CLI.
