VNC vs X11 Forwarding AND networking

First, I would like to say hello and that this guide is super helpful, even if I do go astray a little.
I would like to know what you guys think of using X11 forwarding vs VNC.

It simply seems that VNC is a desktop (like remoting in on a windows machine) while X11 forwarding uses multiple windows. What do you suggest, and why do you suggest it? Currently I am leaning towards X11 as it doesn't seem to need much to be installed to work (like gnome, which I am trying to avoid if possible).
Onto the networking question, I had to pass the networking setup when I did the install as I was unable to connect the cable to my server at the time and was wondering if I could just do it from the disk without doing a complete re-install. But ultimately I would like to set up my server with a static IP, which I have found a "guide" but I would like to see what you guys think first.
I have set up a static IP on my windows gaming rig fairly easily, but this requires file edits, and I am just mostly wary about borking my system as I don't want to re-install 10 times to get it right.
